I personally feel my best when I avoid grains and sugar in my diet. It helps to balance my blood sugar, hormones and keeps bloat away. Whether you're opting to eliminate grains from your diet temporarily or for good due to food sensitivities or you just love nuts and seeds, this nut and seed bread is delicious and is a great alternative to traditional breads.
- 100g walnuts*
- 100g almonds*
- 100g sesame seeds
- 100g flax seeds
- 100g pumpkin seeds
- 100g sunflower seeds
- 5 eggs (organic pasture raised)
- 1/2 cup organic cold pressed coconut and/or olive oil
- 1 tsp salt
*Using raw organic nuts and soaking them overnight to sprout is ideal if you can.
You can keep the nuts and seeds whole but I prefer to coarsely chop/grind the nuts and seeds in a food processor. I grind the seeds separately, especially the flax seeds, in a spice grinder as this will not only help with binding the "bread" together but nutritionally, it will have the most therapeutic effect. Whole flax seeds won't be used by the body and will go right through you. Grinding the flax seeds will release all their great lignans and phytonutrients to provide fiber and balance hormones.
Combine all the nuts and seeds in a large bowl. Add 1/2 cup of organic coconut and/or olive oil (or a combo of both--that's what I did for my most recent loaf), salt and eggs and mix well. Add to a loaf pan. You may want to line the pan with unbleached parchment paper.
Bake at 325 degrees F for 1 hour. Let cool for 10-20 min and enjoy!
